Menu Plan Monday logoI finally feel like my family is back into the groove in this New Year. Considering that its only mid-January I’ll call that a small victory. Now that we’re doing a better job of eating more meals at home, my next goal is to increase the amount of fish in our diet without causing a revolution my dining room. As luck would have it my local grocery store has both cod and shrimp on sale this week and both are fairly accessible seafood options that I’m confident I can get my family to eat this week. When salmon and other “next level” fish go on sale in the coming weeks I will have hopefully built a bit of a foundation for trying them with the recipes this week’s menu plan:

  • Monday: Fried Fish Tacos with Mexican-style rice and black beans
    Tacos are a family favorite meal so it’s pretty easy to make the move from a chicken or beef filling to a fish filling.
    Prep work: marinate steak for tomorrow’s dinner
  • Tuesday: Coffee-Marinated Steak with rice and steamed broccoli
    This recipe makes two pounds of steak, more than enough for dinner plus leftovers for lunches and fried rice later in the week. Marinating the night before makes dinner come together even more quickly and I’ll make double rice for the same fried rice the extra steak will go into.
  • Wednesday: Sweet-and-Sour Skewered Shrimp with soba noodles
    Food on sticks is always a big hit at my house and the fun presentation makes it a little easier to get the family to try the shrimp. I’ll make extra skewers and have the vegetables for lunch on Thursday and the extra shrimp in the fried rice on Friday.
  • Thursday: Pan-Seared Chicken Breasts with Shallots with roasted potatoes and sautĂ©ed green beans
    Shallots and white wine really turn an everyday chicken breast into something special. The leftovers will become tasty chicken cheese steaks on Sunday.
  • Friday: Steak and shrimp fried rice
    The rice, beef, and shrimp I made earlier this week will turn quickly into fried rice with the help of some frozen peas and carrots, some sliced green onions, and a bit of soy sauce. We’ll feel like we had take out without spending the extra money.
  • Saturday: Date Night
    My daughter is going to a friend’s house for a sleep over so we’re going out!
  • Sunday: Chicken cheese steaks with french fries
    One of my favorite local restaurants makes the most amazing cheese steaks, but the cost and calorie counts are through the roof. I can turn the chicken from earlier in the week into “mom’s chicken cheese steak” with some fresh rolls, grilled peppers and onions, and provolone cheese. Oven-baked fries are healthier alternative to the ones we’d have at the restaurant.
